Beta-carotene – provitamin A

 

Plants do not contain vitamin A, but they do contain a substance that the body can convert into vitamin A, namely beta-carotene, also known as provitamin A. It is found in vegetables and yellow or orange fruits, where it is (partly) responsible for the colour. The beta-carotene molecule consists, simply put, of two retinol molecules that are attached to each other by the tail. When this molecule is split, two vitamin A (retinol) molecules are created.
